Pañoleta

From Cati, in the pristine, mountainous, Mediterranean coastal province of Castellon, Spain. Pañoleta means “handkerchief” in Spanish. They fold the curd in a handkerchief and tie the four corners together in the center of the cheese, giving it a unique shape. The rustic exterior is coated with a brown mold and has a stunning, silky white semi-hard interior. This is a delicate and elegant goat cheese.

La Peral Blue

This lightly blued, rare and delicious mixed milk cheese hails from Asturias, Spain.
La Peral is made from cow's milk combined with sheep's cream aged for sixty days in the natural prehistoric caves that dot the landscape of Asturias. It has a strong olive flavor and a pungent aroma. Slightly crumbly, its texture becomes creamier at the finish.

La Yerbera

Produced in Murcia, a former Moorish kingdom, here it is hot and sunny with a rugged terrain. La Yerbera is made from the milk of Murciano-Granadina goats. The cheese is aged for 25-45 days and the rind is coated in chopped almonds and extra virgin olive oil. The cheese is soft and creamy on the pallet, imparting the subtle flavor of almonds throughout.

Monte Enebro

From Avila, this creamy, textured goat's milk log was voted 100 Best Food Products of Spain. This cheese is soft-ripened, cave cured, and treated to a penicillin mold on the exterior. The interior is slightly sharp, rich, creamy, and delightful.

Nevat

Hailing from the Vilassar de Dalt near Barcelona, the name Nevat means “snow”. Its unique shape, slopes up to a peak in the middle, like a snow covered mountain. The interior is creamy at the edges, becoming firmer at the center. Nevat has a full, rich, and buttery flavor with herbal notes and a sweet, mild tang.

Humboldt Fog

From Humboldt County, California this cheese has a central layer and outer covering of ash, with a soft, white interior. When cut, it is reminiscent of the early morning fog. Awarded 2nd and 3rd Place in the 2007 American Cheese Society Awards in the Open Category for Goat's Milk

Montasio Festivo

Dallas, Texas. This goat cheese has been aged for six months to a year, it has a firm texture. Bold and assertive, the cheese is rubbed with an ancho chile/olive oil paste to form a thin, dark-red rind, and an unmistakable aroma and nutty tinge.

Smokey Blue

"Oregon Blue" is a classic Roquefort style blue cheese that is cold smoked 16 hours with Oregon Hazelnut shells. This releases a sweet, creamy, smoky flavor. The cheese is made with cows’ milk. BestNew Product in the World Award (NASFT) Food Show in New York (2005) and best product line (2006) for their Smoky Blue.

Zwitser Gouda

This cheese is crafted in Utah's Cache Valley from the milk of five Brown Swiss cows. The full-flavored Gouda is rubbed with olive oil, then, cave aged for six to ten months. It has a slight Swiss Cheese zing.

Bobolink Raw Milk Cheddar

Made in Pennsylvania, this cheddar is washed with Foret, the finest Belgian farmhouse ale. It becomes profoundly complex. It has an unsurpassed depth of flavor and delightful texture. F eatured on the Travel Channel, Anthony Bourdain's “No Reservations”.

Red Cloud Chevre

Northeast of Boulder, Colorado, Haystack Mountain Dairy, is comprised of a herd of five unique breeds of goats. This cheese, made from unpasteurized goat's milk, boasts a smooth, reddish, soft washed-rind. It is aged for 60 days to develop its powerful balanced and complex flavor.
